Before 1965, if I recall Roman Catholic nuns wore a more heavily starched, stiff headdress called a COIF. I think they less severe one that you have shown is simply called a veil.

The part of the headdress that shows only the face and covers the forehead, ears, and neck is called a WIMPLE.
